The Gambia is inhabited by a vibrant array of tribes many originating from surrounding countries such as Mali, Guinea Bissau & Senegal, each having its own traditions & tastes. This rich mix of flavours from the arid desert to the rain forests all come together in harmony to create a rainbow of dishes which Gambians call staple. Usually having a bit more than just a “little” spice, Gambians like there food hot and rich, and this series will aim to keep the authenticity of these fantastic dishes intact. We will explore many dishes which originate from the different tribes and give you some insight into their origins.
The golden coastline of The Gambia is, to its people an important part of their lives, not for the beautiful sandy beaches, but for the abundant harvest of seafood it provides. The River Gambia which stretches the full length of the country is an essential source of food to many local villages, sometimes being thier only supply of fresh fish.
